Coming from an Italian household, sausage was always on the menu! So I had to get cracking and figure how I can make sausages for my family that don’t taste like the store bought *FAUX MEATS* that are out there. Not that they’re aren’t good, but when you come from a family that made homemade sausages, those really don’t compare! So I had to roll up my sleeves and create something that I could make that would satisfy my family, especially my husband. You know the saying…If Mikey likes it!!!
Here is one I make that everyone really enjoys, and I didn’t put much heat in it so my grandchildren could enjoy them too. I always say, just add some heat later if you want them nice and hot, or extra spicy. Here is the link where you can follow step by step.
These sausages go great like a hotdog in a bun or just cut them up and throw them in a pan, cooked in a little red wine. They were simply delicious!

Well if you`re anything like me, frustrated whenever you try to find some vegan pierogies at a grocery store, and there are none to be found except for potato and cheddar cheese!!! I can never find any that are vegan for my famly to eat.
Well that`s when you put your foot down and just simply make your own vegan batch; and I promise it is super easy! That`s right! You can totally make your own!!! The best thing is they`re not hard to make at all, and takes very little time.
Coming from an Italian family, we make pasta with our eyes closed ( making them is similar to an Italian ravioli :D, except leave out the egg from the dough). All we needed was to add potato in the pierogi rather than ricotta. Making vegan recipes isn`t difficult at all and healthier than non vegan food.
This recipe does inclue a vegan cream cheeze that I add to the mixture, it will be included in the video.

Small note : If you don`t have a hand cranked pasta machine …( I recommend you definitely need to get one, every house hold needs one hehehehe:D ), you can always simply roll out the pasts with a rolling pin. I am sure if you look around you can even find a second hand one pasta machine. New would go for approxitmetly $80.00 dollars and up. What`s life without a pasta machine!

We don’t all have the time to make homemade pasta from scratch; so when you’re having a last minute craving for a nice hot dish of lasagna, this recipe is perfect for you! (Especially during our cold winters in Canada). Ready-made lasagnas are easily accessible at the grocery store, but are full of ingredients that are damaging to our health. Most of the time I eat raw vegan food, but I was craving a nice hot dish of lasagna rather than a cold raw one.
I figured I would take all my raw ingrendients I would normally use to make my raw dish and simply bake it in the oven. I also ended up throwing in some lentil, making it a more robust dish. Lambsquarter can absorb nitrate from contaminated soil so be careful where you harvest this plant
and watch out it has a poisonous look-a-like (Nettleleaf goosefoot) but it’s rank odor reveals its identity.
Lambsquarter is a relative of the spinach. Avoid too much raw consumption of plants this plant it has a heavy oxalic acid content. So best if you Cook it for it will destroy some of the oxalic acid. So if you are using some for salad and smoothies use lemon juice to neutralize the oxalic acid and this will help prevent kidney stones.

Recently, I was asked why I post and record videos of NON RAW vegan dishes on my RAW food channel. . .
I know of so many people who just don’t want to be RAW and would love to try and make some of my Italian traditional foods, or just some new recipes. There are some people just trying hard to transition to a plant based diet or vegan diet, and have no idea what to eat or do, and are not ready whatsoever to even try a raw diet. So, by sharing some of my recipes I create and make for my NON RAW family, I might just be helping others make that transition just that much easier for them. So yes, my YouTube channel does say Connie’s RAWsome kitchen, and I promise you there will be many RAW dishes that I will share with you all, but I am also so very happy to help others who just want to take that step forward to a more compassionate lifestyle and make a difference, so why not help them right??

Seitan can be added to many dishes in virtually every cuisine, from Italian, Greek, all the way to Vietnamese. The real one reason why seitan is so popular is because of it’s texture, especially when compared to other alternatives vegan proteins, such as tofu or tempeh, which don’t really have that “meaty” texture.
Nutritionally, seitan is a powerhouse. In both quantity and quality, the protein in seitan is similar to that in beef. Sirloin steak and seitan both supply approximately 16 grams of protein per 100-gram (3.5 once) serving, or about 25 percent of the U.S. Reference Daily Intake. This is twice as much as an equal amount of tofu and 40% more than is supplied by two medium eggs. And while the 3.5-ounce sirloin comes with 11.5 grams of saturated fat, 58 milligrams of cholesterol, and nearly 300 calories, seitan contains no saturated fat or cholesterol, and only 120 calories per 3.5-ounce serving.

How exciting is this! Well for me it is 😀 I used to buy a product that looked and tasted just like and egg yolk, but wow was it expensive. not only did it cost too much when I needed more I couldn’t find it anywhere. Except online and that would have cost me even more!. Being that I like to watch my dollar, and make dishes that people can afford. I was determined to figure out how to make it.
